Pallotte Pimento Bacon
Pallotte made with pecorino and eggs. Served with pimento emulsion and crispy bacon
Crispy Pasta – Truffle – Walnut
Crispy pasta served with a black truffle and ricotta cream, grated baked walnuts, and honey.
Crudo Citrus Sunflower
Home cured salmon with a tangy lemon creme cheese. Served with a crispy cracker made with sunflower seeds and dill.

Veal tenderloin tartare with olive oil, sea salt, black pepper & aged parmesan

Served with fermented chili emulsion, crispy pistachio crumble and pickled onions

Focaccia - Tomato - Ricotta
Whipped ricotta cream, with lemon, fresh parsley and served with spicy sundried tomato and smoked chili compote.

Served with homemade salty focaccia bread.

Zuppa Toscana - Egg yolk - Sofrito
Creamy parmesan soup served with creamy egg yolk, chives oil and fresh chives.
INTERMEDIATE COURT
Creamy risotto - Parmesan - Truffle
Silky risotto made with Italian cream cheese, black pepper, white wine & truffle. Served with pickled beech mushrooms.
Yellowfin Tuna - Caesar - Capelli
Yellowfin tuna tartare served with a creamy caesar dressing, basil oil and crispy fried capelli pasta.
King Oyster Mushroom - Capers - Pumpkin
Caramelized King Oyster Mushroom, served with a salty- sour capers and lemon butter on top of a deep flavour full pumpkin purée.
MAIN COURSE
Striploin – Redcurrant – Red wine reduction
Rosé-grilled striploin with red wine reduction and crushed black pepper, pickled redcurrants and fresh herbs
Orechiette - Lemon - Garlic
Italian “Ear” pasta served with creamy garlic, parsley and lemon sauce. Topped with crispy pancetta.
Stracciatella – Pickled tomatoes – Smoked salt
Homemade Italian stracciatella on a bed of fresh tomatoes & pickled San Marzano tomatoes.

Topped with smoked salt, basil oil & fresh basil leaves.

DESSERT
Mascarpone - Olive oil Cake - Coffee
